Ortodoxo Grande do Viso Cheese

The Grande do Viso is a firm, washed-rind cheese crafted with care and precision by the dedicated hands of the Orthodox team. Inspired by Gruyère, it is made with low-temperature fermentation and minimal use of added cultures—making it the rawest, truest expression of their craft.

Each wheel undergoes a slow, deliberate aging process. For the first two months, it is turned daily and washed regularly with red wine, which imparts a warm chestnut-orange hue to the rind and encourages the growth of aromatic surface bacteria—similar to those found in Taleggio. After this intensive care, the cheeses are transferred to wooden planks, where they are turned every few days and left to mature slowly, allowing time to deepen their complexity.

From curd to crust, every stage of Grande do Viso's evolution relies on the skillful rhythm of artisan hands—stirring, shaping, flipping, and washing—ensuring each cheese develops with character and grace.
