Situated in the Serra da Estrela mountains within the Beira Alta region, Filipe makes Alva using milk from the Murciana goat, a rugged breed known for producing a sweet milk rich in butterfat. Washing the curds of lactose, a technique more commonly used in Dutch cheesemaking, yields even more sweetness. Aged for about 30 days, Alva has an invitingly gentle texture and flavor that appeals to a wide range of palates.
